I was wondering if a seller could add a BIN at a higher price once a bid has been placed?

they cannot revise the auction once a bid is placed

What if they originally had a BIN, which went away when the first bid was placed. Can they put it back?

no, the buy it now goes away as soon as the first bid is placed, unless there is a reserve
