Default Where to go in August?

My boyfriend and I were planning a trip to SE Asia in August but due to some big surprising expenses ($3000 surgery on my dog included) and the high cost of airfare we have decided to go somewhere closer to the US. We are looking around Central America and the Caribbean, but are very open to suggestions. We like the beach, scuba, good food, culture, and a nice place to stay, but not too touristy. We will go for 1 to 2 weeks.
Any ideas?

After spending hours online, we have come up with a list of places we should both enjoy.
Does anyone have any feedback?
Belize-spend a week in Ambergris Caye and a few days in the interior/rainforest area
Roatan, Honduras
Grand Cayman-Has anyone stayed at the Ritz Carlton Resort? I am worried it might be too big and family friendly for us.
Harbour Island
Turks and Caicos

i dont know if this still helpful.. i think stopping by honduras in Roatan its a very very nice place to stay for a while o pass by, if you want to see some coral reef, if you wanna enjoy nature, seafood at the beachside, canopy activities, scubadiving lessons and quick views, if you passing by in a cruise ?? or planning to stay.

as much as there bad news of this country, i know best were its safe and Roatan its were tourism its at its max in this country, and a place to do alot of things and enjoy a relaxing times.

Not a good time to visit SE Asia in July/August because of the Hungry Ghost month where many Chinese will burn large paper mache structures, "hell money" and offer food to the souls of the deceased. Common sight in Thailand, Vietnam, Singapore, Malaysia, and parts of Indonesia. Might be an eye-opener for you but for people like my DH, they absolutely hate the smoke that travels for miles, and we try avoid traveling there during these months.
