My husband and I frequent Las Vegas and we eat at a lot of the fine dining restaurants but our absolute favorite is Lotus of Siam. Bar none, the best Thai food in North America. It's in a seedy strip center but ignore that and remember you are there for the food. I'm so jealous! Some dishes to consider:

Seabass with Basil and Drunken Noodles
Nam Kao Tod -Crispy rice with sour sausage
Nua Nam Tok - Beef salad with lime sauce
Beef Jerky

I believe it is no longer Aladdin hotel but Planet Hollywood. The Spice market buffet is still there though. I was in Vegas 2 months ago and ate at the buffet. Holy Cow... there was just TOO MUCH FOOD!!!! The dessert bar alone was impressive. They even had cotton candy. ^_^
